Round robin first, bracket only if you want one

Club pickleball is mostly round robin, because the point of the morning is playing rather than winning, and nobody wants to drive over to lose once and go home. Eight teams is 28 matches and everybody plays seven of them.

If you do want to finish with a final, the same field can run as pools with a playoff on top — same wizard, different answer on the format screen.

Points matter for the table

Two teams level on wins is the normal outcome of a round robin this size, and points scored is what separates them. Entering the actual scores rather than just the winner is what makes the final table defensible.

Can I run it across several courts?

Yes, and a round robin parallelises almost perfectly, so four courts really is about a quarter of the time of one.
